What are you having for dinner tonight??



Last night I made Devilled Sausages (a recipe I got from a NZ cooking magazine - More Food), mash potatoes, corn and beans.

Thursday Night is Pizza Night at my elderly neighbors house.  I have a standing invite to join her every week.  She makes frozen pizza's then adds additional pepperoni and peppers.  I add fresh minced garlic to mine.  We have a lot of fun.  I usually don't get home until after 11.

Today I have restocked my freezer of cheese rolls.  Makes it nice and easy to invite people on the spur of the moment for lunch.  Those and homemade (or can!) soup go down well.  (esp as it's cold here :(  )

Tonight we had sausages and chips, with a ton of garlic! It's not my normal fare,  but with the workshop today, it was time to have something really easy. Roll on Sunday...a decent dinner.

Thursday - Ravioli
Friday - steak and chips
Saturday - Chicken Parmigiana, mash potatoes, corn and beans.

Made and apple cake for dessert, a new recipe which went down with the family and easy to make - will post recipe for you...

We had home made pizza (carrot, celeriac, zucchini, cheese, chicken, ham, pineapple) and Funki had a chocolate muffin filled with caramel for dessert

The other day I turned on the Rachael Ray show.  It's just an hour daytime talk show, but she got her fame originally by cooking.  She made Lentil soup with sausage and kale on the show, and it sounded very interesting, so I'm going to make it tomorrow night.  Here is the link to the recipe:  http://www.rachaelray.com/recipe.php?recipe_id=2616  I'll let you know how it turns out.

Oh...I LOVE Rachael Ray...she's a great talk show host (normal, down to earth...no pretentiousness) and she's a fab cook as well! We have her program every weekday morning (though I only see her about once a fortnight, myself). I do manage to catch up on what she's been up to though, as I have a friend who watches her religiously every day.

Last night - Beef, bacon and tomato pie, mashed potatoes, broccoli, cauliflower, zucchini and carrots.
Tonight - Pork Steaks with vegetables.
Tomorrow - Slow cooked Lamb Shanks with rosemary and garlic and cauliflower (can u guess that cauliflower was super cheap this week) au Gratin, and steamed veges.

Many years ago, when nobody else was buying them, I used to get lamb shanks for 20c each and roasted them for dinner. They were, and still are, delicious. Then a few years ago, some smart a$$ chef decided they were a 'gourmet' item...and the price frigging started gong up. Now, in New Zealand, they're about $25.00 per kilo...that's about 3, or maybe 4 if you're lucky, shanks!!!


Tonight for dinner (we've just finished) we had beef satay on toast. Quick and easy, cos I've been out lapping up the energy, warmth and beauty of a local forest for the day. Photos in the photo thread.

That is expensive. They're about £8 per kilo in the UK (approx $20).

I cheated and bought them ready made. :P They look really easy to make from scratch though; combine cream cheese, ciabatta breadcumbs, cheddar cheese, olive oil, seasoning, parsley and chives and spread the mixture on top of pork loin steaks, bung them in the oven (200C/gas 6) for 30 minutes et voila!

This evening we're having roast beef and Yorkshire pudding with carrots, cabbage, cauliflower, parsnips, roast and mashed potatoes. :toast:

Last night was kids tennis lessons, so we normally have something I can prepare earlier in the day like Spag. Bol. but seeing we are home alone we had Chicken and Sweet Corn soup (Thanks Mrs Campbells) and toasted ham and cheese sandwiches!

Fridays we always have takeaways but we haven't discussed what yet.  Darren Lockyer is coming to town this arvo so I am taking kids down to get an autograph seeing Master Mozzie is a Broncos fan. *To all the non aussies here.... Darren Lockyer is a very talented Rugby League player.*

Nooooo silly, Mrs Campbell lives next door to Mr Heinze who lives next door to Mr and Mrs McCain whooooooooo lives next door to  Mr Wattie!!!!

And I have just seen those gawjus thighs in the flesh...... whit whooooooooo.... and that husky voice.  And after lining up for an hour to get his gawjusness' autograph, I told kids there is no way am I driving back to town to get takeways for tea/dinner, so we went to shop and got a pizza and nuggets to cook at home.  Thanks Mr McCain...u done it again!!  :wink:

Hubby gets home from his trip this arvo, with my father-in-law, so tonight we will have Rib Fillet Steaks done on the bbq, with grilled haloumi cheese, salad and potato bake.  (Father-in-law loves my salads and potato bake, so it is a treat for him, can you tell my mother-in-law does not do much in the kitchen ... hence me cooking him some traditional good tucker for him to take home?)

Bangers and Mash with fried tomatoes and baked beans.

The bangers are fancy ones tonight just for something different - South African Boerwors and Italian Beef and Pork from the local organic butcher.

Everybody has such interesting diets!

I'm trying to thin out the contents of my freezer, I had to buy a small stand-up one, because I had completely over-stuffed my refrigerator's freezer.  Now the little one is almost full, how in the world did I ever get by without it?

Yesterday I found a nice piece of frozen smoked pork butt, some lima beans, and some Pasta-Roni angel hair.
Today, I've noticed that I've collected a big bagfull of bell peppers in the fridge, as well as quite a few zip-loc bags of frozen tomato sauce.  Since I also have some hamburger in the freezer, stuffed peppers is a no-brainer.  Will also give us some nice leftovers, since I'm working 4 days this week, and won't have another chance to cook anything.  (http://i175.photobucket.com/albums/w124/pootsie256/smileys/bc832223.gif)

Last night I didn't actually eat dinner.  I had a late lunch of a wrap with rotisserie chicken with fresh julienne carrots, cucumbers, zucchini and other fresh raw veggies, with a side of Asian sesame dressing and some Pita chips.  It was delicious and quite filling.

Fried yucca is the root of the Yucca plant.  It has the texture of a soft potato, and a slightly milder flavor.  I actually prefer them to French fries.

We went to a pig roast over the week end, and there was a LOT of leftover pork.  We came home with two foil pans (at least 10 inch by 15 inch) which were heaped with pieces of pork.  I've had barbecue pork sandwiches, pork ribs, plain pieces of pork, and last night I decided to try pork stroganoff...not so good.  I also heated up one of the pans, and took it to my workplace on my day off, with a bunch of buns and barbecue sauce.  They loved i!  and.. we got rid of more pork.  I also froze 4 quart-sized freezer bags.  Enough is enough!  NO MORE PORK for a few weeks anyway!

OK...we're having marinated chicken wings with roast vegetable salad

The marinade that I made is a combination of smokey barbecue sauce, soy sauce, sweet chilli sauce, a few shakes of Morroccan seasoning and a few shakes of garlic salt. They've been marinating for a couple of hours now...another couple to go.

The roasted vegetable salad...

I cut into large cubes...kumara (sweet potato), pumpkin, capsicum (peppers) and asparagus...tossed them in a little oil with Morroccan seasoning and celery salt, roasted until done but crunchy...will serve only slightly warm, with balsamic vinegar splash

You folks eat really well, and Sheila, your organization is unbelievable.  I can't seem to plan more than 2 days in advance, so therefore I'm at the grocery store several times a week.  Our diet consists of whatever my craving is at the time...and Smilie, I totally agree with you, the hardest part is in the planning.  If everybody's husbands are like mine, when I ask him what he'd like for dinner, he will say 'I don't care'.  Anything to avoid making a decision.

Last night we had 'beanie weenies' (cut up weiners in a can of beans).  Obviously I wasn't into making anything too labor-intensive.  I made chili over the weekend, so tonight we're going to have chili-dogs.  And THAT, my friends, is my yearly quota of weiners.

Tonight I was invited out to dinner, so that my friend could introduce me to a gentleman who is involved with the lapidary club, which I am thinking of becoming involved with (the club...not the gentleman! lol)

She cooked for us...Pollo al Chilindron, and we had this with salad and potatoes gratin.

Started with a standard sage and onion breadcrumb stuffing mix and added a chopped slice of multi-grain bread, chopped spring onions, curry powder, and Moroccan seasoning (comes in a jar...leave out the glass!) mixed together with a little water.

That was last night's one...but I vary and modify it often. Often it's not so bready...I use what's at hand at the time. I try to keep it to a fairly dryish mixture, as the juices from the chicken make the stuffing more moist, and a wet mixture then just becomes a gravy type of affair.

Sheila...sometimes I put in crushed peaches or apricots...they go beautifully with chicken. Mind you, so does pineapple :)

We went to an Indian restaurant to celebrate Mr Vix's birthday and I had a 'special' biriani (rice with chicken, lamb, prawns & vegetables), a green salad & garlic naan bread.  I felt too stuffed for dessert!

Chicken Gumbo, using the Ocado recipe below.  My family likes this with rice and I added a cup twenty minutes before the end (rather than cooking it separately) and this was ample for the three of us.  Just make sure you add more liquid as and when needed until the rice is cooked.

We have some fish filets that we caught last summer, and I bought a bunch of fresh vegetables at the store a couple of days ago.  I'm trying to think of something different to do with the fish, besides frying it in bread crumbs.  The filets are small, the fish were only about the size of a man's palm.  Maybe I'll try sauteing them in a little butter and olive oil, with some garlic.

I'm using the contents of my freezer, because we are in the middle of an unprecedented cold spell in the southern US, and I really don't want to go outside at all!

Place the fish in the middle of some foil, top it with julienned/sliced vegetables such as carrot, celery, capsicums/bell peppers, zucchini/courgettes, herbs and top with a knob of butter.  Close up the foil like a package and bake in a moderate oven for about 20 mins depending on the thickness of the fish.

Yep, just what I would have suggested! :tup:

I had some mates over for a meal last night and, having just come in from shopping with fresh food, offered them a choice of:

  • Chicken Fricassé
  • Roast lamb
  • Spag bog (aka Spaghetti Bolognese)
  • Chicken stir-fry (which I'm infamous for!)

I really expected everyone to go for the stir-fry but, no, what did they choose?  Bloomin' good ol' spag bog! :huh:  It really surprised me ... and I was quite happy cos it's the quickest and easiest to cook. :D  Apparently, my spag bog is infamous too!! :lol:

We've had a friend staying with us for the last couple of weeks.  (easiest going guest we've ever had) so I've had to cook 'decent' meals every night. 
Tonight I have 3 (or 4?) people arriving.
Next week it'll be just back to us...  so will be nice to relax.

Egg n' chips.....  :D  Tonight bought Thai, a friend popped in with some Smoked fish. Our guest says Wow great feed (well signed it.. He's Deaf)   Was  a nice easy finish.

My casserole is really a combo of two recipe's I have. but basically what is in it is,
cooked chicken, onion, celery any vege you like. tin of cream of chicken soup, and tin of creamed corn.  when nearly ready to serve add grated cheese  (you can never have too much) and parsely.  It's cool 'cause if you double it and freeze it, next time all you have to prepare (or buy frozen  :wink:) is the mashed potatoes.

Oooo, that sounds nice and easy ... thank you! :tup:  I do a similar thing sometimes on the stove top with just the cooked chook, cream of chicken soup, bit of onion, and I add a shake of dried tarragon, then serve it with rice.  Never thought to add creamed corn, I'll try that sometime. :D

Don't use red cabbage if you are planning to have leftovers.  The dish was great the first night, tasty and pretty.  The next day, however, was quite a different story.  While it was still pretty tasty, the color of the cabbage had leached out into the rest of the dish, and it was quite blue throughout.

You ladies always seem to eat so well!  or... is it that you just don't say anything on the nights when dinner is a frozen pizza?  We were tired today, so I didn't feel like cooking, and I was craving lobster.  We have a chain of restaurants over in the USA, called 'Red Lobster', specializing in seafood, and right now they are specializing in lobster.  We got there before 5:30, and there was still a 1/2 hour wait!  I do NOT wait in lines at restaurants, so we went to another place that had seafood, but no lobster.  The service SUCKED! I had to call out to a passing waiter after we sat there for over 10 minutes just to get a freakin' glass of wine!  Food was OK, but I won't be in any hurry to get back there.  I had seafood au gratin, by the way.

:lol: Pootsie, of course we (by we, I mean my mob ;)) sometimes eat take-away (take-out) food and frozen meals too, although I never buy frozen 'complete' meals.  Take-away for us is usually fish and chips as a bit of a treat once a fortnight or so, when I simply can't be bothered with cooking!

With frozen meals, I often make larger quantities of some dishes (such as bolognese sauce, stews, casseroles, etc.) and freeze it for those times when I'm too busy to cook from scratch.  I usually freeze left over, cooked rice too, then make fried rice once in a while. :nod:

I never buy frozen complete pizza, but I do buy frozen pizza bases and always keep a selection of grated cheeses in the freezer too, so that I can usually make a pizza or two, if so inclined.  Frozen grated cheese is great to top off cottage pie, baked/jacket potatoes or a salad with too - it defrosts very quickly. :tup:

What a shame about your not getting any lobster. :no:  I absolutely adore the stuff but rarely have it because it's so expensive here. :irked:  In fact, nearly all seafood is dear here, although there are some cheaper types of fish available.

Ok, so what's for dinner tonight?  I've no idea yet!  It's far too early for me to even think about it yet!! :giggle:  However, last night we had penne bolognese with some of the frozen stuff I'd pulled out of the freezer and freshly cooked pasta.  I discovered that I'd run out of spaghetti (unusual for me), so penne it was! ::)  The previous night we had home-made fried rice (with loads of vegies and 'stuff' in it) and the previous night was tinned salmon and salad, again with loads of 'stuff' in it!  So that's three nights of "I can't be bothered with cooking" type meals! :whist: :lol:

My craving for lobster never went away, so we went back to 'Red Lobster', this time going at 3:30, believing that there wouldn't be any wait.  Can you believe that we still had to wait 15 minutes to get seated... AT 3:30 IN THE AFTERNOON?????  We decided that we could tolerate a 15 minute wait, and there were 2 seats at the bar, so I FINALLY got my lobster 'fix'!

I've just (at almost 10pm o.O ... only just finished work though ::)) knocked off a bowl of minted 'lamb' stew which I made a bit earlier.  Alas, I think that the 'lamb' was really beef!  That'll teach me not to label it before freezing. :whist: :rofl:

I'm going to have a go at roasting a chicken on the rotisserie of my new barbie! :bbq:  I'll also be trying various things with vegies on the barbie too.  It's all an experience in trial and error for me at this stage, so I'll let you know how it all turns out!! :chef: :lol:

Sunday - stir fry beef.

Lots of veges in them that my son doesn't like...or at least won't eat id they're on his plate on their own. So...don't tell him what's in the patties, and hey, presto...vegetables inside the little sod!  :lol:

I totally agree! (What a surprise!! :P :D)

Yesterday was me Mam's birfdy and we have a 'thing' here that, whoever's b'day it is, gets to choose what they'd like cooked for dinner/tea.  Mum chose roast beef and Yorkshire pudding so we had that with roasted spuds, punkin and parsnips, and steamed carrots and broccoli.

For once I actually made a dessert - I bought one of those really light sponge cakes with raspberry jam and fresh cream in it, put small slice of that into dishes and topped it with vanilla ice-cream, fresh raspberries, a dollop of clotted cream and a quick twist of chocolate sauce.  There wasn't much left at the end!

That means that tonight I won't have to cook.  We can have cold beef and salad or something similar. :nod:

I had salmon with a baked jacket potato - sounds extravagant, I know...but I did manage to get a fillet of salmon marked down and cut it into two pieces...froze one. Was delish
